Operator 25 use seasonal produce to create comfort food and classic flavours, but with a bit of a twist. The menu varies, but can include such delights as Balinese marinated pulled pork, coleslaw, chilli mayo, coriander, fried shallot and crackling on a brioche roll with sweet potato wedges. Or try battered soft shell crab salad, with Kipfler potatoes, avocado and quail eggs, in a lime ginger dressing. The very first use of the building back in the early 1900's was Melbourne's first switchboard, hence the name. The cobblestone wall adorns the heritage listed facade, concealing a modern rustic ambience inside.
